New Possibilities in Upstream Milk Processing

It has to produce — at an affordable price — milk and milk products that are safe to consume, look good and taste good, and have a high nutritional value. Fresh milk is a highly perishable product with a relatively short shelf-life among farm products, so another challenge for the dairy farmers is to lengthen milks shelf-life. The dairy industry also has to contend with increasingly stringent regulations regarding the safety of its products, its environmental performance, and the demands of animal-rights activists.
